BREWING STRATA’S HOUSE COFFEE
25g Coffee, ground medium fine, like fine sea salt
17 clicks on a Baratza Encore
400g Water 205°F
Bloom - Pour 50 grams lightly and carefully to ensure that all the coffee is saturated
30 seconds - Pour heavy even circles to 150g
45 seconds - Pour heavy even circles to 220g
1:15 pour to 280g using the same heavy circular pour
1:40 pour to 340g
2:00 pour to 400g
Drain Time ~ 3m30s give or take 15-20 seconds
55g Coffee, ground medium-coarse, like table salt
22 on Baratza Encore
900g water 205°F
Bloom - pour 110g of water slowly to evenly soak the coffee grounds
45 seconds - pour to 300g total
1:30 - pour to 500g total
2:30 - Pour to 700g
3:15 - pour to 900g
You might need two kettles or to have extra hot water on the stove to refill your kettle after the first 500g of pouring because this is a huge recipe.
